 Steamed Pork Floss Cake

Mould: 15.5*15.5*7.5cm square mold with movable bottom

4 eggs, 2~3 drops of lemon juice, 50g fine sugar, 120g Arowana low-gluten flour, 10g salad oil, a little pork floss, a little diced ham, a little chopped seaweed

๐Ÿ1. 4 eggs are separated from yolk protein. After adding 2~3 drops of lemon juice to the separated protein, add 50g of fine sugar 3 times until it becomes stiff and foamy, that is, it is lifted and pulled up to have a strong little hook.



๐Ÿ2. Continue to add all the separated egg yolks, and use an electric whisk to beat at high speed until the color changes from dark to light, until the volume becomes larger.



๐Ÿ3. Turn to low speed and continue to beat about 1 minute, then the big bubbles in the egg batter will slowly disappear. When the egg batter becomes more and more delicate, you can stop passing it.




๐Ÿ4. Then add 120g of low-gluten flour sieved in advance, and mix with a spatula until there is no dry powder.




๐Ÿ5. Add 10g of salad oil and continue to mix evenly.




๐Ÿ6. Pour half of the batter into a square mold with a movable bottom (15.5*15.5*7.5cm).




๐Ÿ7. Put the mold into a pot with boiled water and steam for 5 minutes on high heat. A towel can be placed at the bottom of the mold to prevent the bottom of the cake from getting too wet.




๐Ÿ8. After about 5 minutes, spread a layer of pork floss in the mold.




๐Ÿ9. Pour the remaining batter into the mold.




๐Ÿ10. After sprinkling a little pork floss, diced ham, and chopped seaweed on the surface, put it back in the pot and continue to steam for about 15-20 minutes.
